Pumpkin Chivda | Pumpkin Seeds

Ingredients:

  • 1 cup pumpkin seeds
  • ½ cup poha (flattened rice)

  • 1 tbsp groundnut oil (use A2 ghee for added flavor)
  • 1 tsp mustard seeds
  • 1-2 green chilies, chopped
  • 8-10 curry leaves
  • ¼ tsp organic turmeric powder
  • 1 tsp cumin seeds
  • Salt to taste
  • 1 tbsp coconut slices (optional)
  • 1 tbsp raisins (optional)
  • 1 tsp sugar (optional)
  • A pinch of asafoetida (hing)

Instructions:

Step 1: Roast the Pumpkin Seeds

Dry roast the pumpkin seeds in a pan over medium heat until they become crisp. Remove and set aside.

Step 2: Roast the Poha

In the same pan, dry roast the poha until it turns crispy. Set aside.

Step 3: Roast the Peanuts

In the same pan, add a little groundnut oil, roast the peanuts, and keep them aside.

Step 4: Prepare the Tadka

  • Heat oil in the pan.
  • Add mustard seeds and let them splutter.
  • Add cumin seeds, curry leaves, green chilies, and asafoetida.
  • Stir until the chilies turn slightly crispy.

Step 5: Add the Spices

Add organic turmeric powder and sauté for a few seconds.

  • Add the roasted pumpkin seeds, poha, peanuts, chana dal (if using), coconut slices, and raisins.
